TWD: Cottage Cheese Pufflets


Mmm...how yummy were these? I loved the texture and that subtle creamy cheesy-ness. They really do need to be eaten right away. They do not keep at all. Any older than couple of hours and they turn soggy and gritty, but straight out of the oven, they are wonderful.

The dough is very easy and quick to make but I had a very hard time working with it. As you can see below, my poor pufflets look like they've been through a wringer...and they kind of have! LOL!

My first attempt was to roll out the dough and follow the instructions in the recipe to the letter. See those triangular blobs in the center that look like Quasimodo of the cookie world? Those two were my first attempt. It was very difficult getting the off the waxed paper to fold it over. So, my second try was to roll it out then cut out shapes. Seemed to work better but still quite difficult - they look perfectly innocent in the picture but they misbehaved as well.


I tried to cut the dough in slices (the square shaped ones) but cutting a chilled dough just ended in broken slices, and cutting a softer dough ended up in a big mess.

The round shapes were my last attempt. I used a teaspoon scoop then pressed it with the bottom of a glass (like one would when making gingersnaps). By this time, I had given using waxed paper and moved on the plastic wraps. It made it much easier to peel the dough off but next time, I would chill the rounds first before peeling it off the plastic wrap.


I had hoped that their solitary time in the oven would have some metamorphic effect on them but, alas, they retained their rather mutated look. By now, though, they grew on me. I did, however, tried to dress them up a bit hoping to cover their flawed appearance but it didn't make much difference. Just looked like Quasimodo with dandruff.


Whatever they look like, they sure were delicious. In the end that's really what is important. Looks might help at times, but it doesn't really matter.

Aah, thanks! You're so sweet to be gracious after all of your work (and probably frustration that you were kind enough to not dwell on, lol).

These were very hard to work with, which is why there aren't keepers here.

But as long as they tasted good....

That looks delicious but when it comes to cooking, I’m having second thoughts, it’s just that I am not so good at it; I really don’t have the magic to make such tasty food. Good for you :)
